I’m trying to determine which wire (red, white and black) on the GM2804 motor corresponds to which phase on the screw terminals of the SimpleFOC Shield.

Hey James, welcome to SimpleFOC!
It doesn’t matter. The order only determines the natural direction of rotation, but you can reverse it in software.

Thanks! It’s my first dip into BLDCs/Gimbals after mostly working on brushed motors, so it’s a little disconcerting. 
it’s good to pick something and stick with it to reduce that particular source of confusion in the future.
I always put black at the bottom, or nearest to me.
